Frontier Fridays: Keeping Meat in the Summer

To Keep Beef in the Dog Days

Any kind of meat will keep longer even in the hottest summer weather if it is put in an earthen ware jar, sprinkled with charcoal, and covered with netting to admit air and keep out flies.


(This is BEFORE refrigeration and was a problem on the frontier... I wouldn't suggest this now, maybe if you lose power due to a storm you could try it to prolong your food supply, but thank goodness we have ice!)
